Vegetable Dumplings

Vegetable Dumplings

Serves: 4| Cook Time: 15 Minutes

Ingredients

Filling:

1 cup lentils

1 cup diced mushrooms

1 cup shredded cabbage

½  cup onions

2 cloves garlic

1 tbsp  oil

1 tsp ground ginger

3 tbsp soy sauce

1 tbsp hoisin sauce

Sprinkle of salt + pepper

Water for steaming

Dough:

2 cups flour + 1/2 cup

pinch of salt

1 cup boiled water

Directions:

  1. Cook rice according to manufacturer’s directions.
  2. Filling: heat oil in a large pan, next add garlic and onion. Cook until they are tender. Add ginger and cook for an additional one minute. Stir in mushrooms, salt and pepper. Lastly add cabbage, soy sauce and hoisin, let the mixture simmer for 5 minutes.
  3. Dough: mix dough ingredients in a food processor. Place the sticky dough on a well floured surface and roll thinly. Cut 2 inch circles out of the dough. Take each circle and stretch the dough well. Place 1 tsp of filling mixture in the middle of the circle, fold the other half of dough onto the other side and pinch its ends to create a semi-circle. Boil a pan of water, add the dumplings gently into the water, do not overcrowd the pan. Boil until dough has turned in color slightly and risen to the top of the pot. Immediately scoop the dumplings from the water and place onto a heated pan that has been prepared with 3 tbsp of oil. Cook the dumplings until they are golden on both sides.
  4. Serve with rice or desired dipping sauce and enjoy 🙂
